Tex Mex Scramble

Ingredients:


  • 3 ounces of Egg whites

  • 1 Large Egg

  • ½ cup of Diced potatoes

  •  3.5 ounces of colored bell Peppers

  • 5ml of Salsa 


Method:


  1. In a skillet over medium heat cook potatoes until tender

  2. When potatoes are about half way done, add in peppers and finish cooking until potatoes and peppers are tender.  Remove from the pan and place in a bowl.

  3. Scramble egg whites until cooked through, place on top of potatoes and peppers in a bowl.

  4. Finish off with fresh salsa and enjoy!
