BBQ Pork Sweet Potato

Ingredients:


  • 3 ounces of Pork Tenderloin

  • 2 TBS of Sugar Free BBQ Sauce

  • 3 ounce Sweet Potato  

  • 1 ½ TBS of Butter

  • 1 cup of Green Veggie of choice


Method:


  1. Cook pork tenderloin in crockpot on low for 8 hrs, or low for 4 hr

    a. *Cook time will depend on amount of meat*
  2. Bake Sweet potato on 375 until tender.  You will be able to easily puncture with a fork

  3. Once pork is finished cooking, use two forks to shred.

  4. In a bowl, place a serving of pork and SF BBQ sauce and mix together.  Then place on top to bake sweet potato and serve with a side of green veggies of choice.
