Tuna Patties

Ingredients:

1 can/pouch of Tuna

3 Large eggs, lightly beaten

¼ cup of Panko bread crumbs

1 TBS of Fresh squeezed lemon

Salt and pepper- to taste
Method:

Combine tuna, egg, and breadcrumbs in a bowl and mix until evenly blended. Season to taste.

In a skillet over medium heat, spray with cooking spray of choice.

Form tuna mix into patties. A cookie scoop works great to give you even sizes!

Once the pan has come to temp, gently place the patties into the pan. About 4-5 mins on each side, or until they are a nice golden color.
*Don’t overcrowd the pan when cooking the cakes. They will take longer and flipping them over will be more difficult.
*There is not much filler in these cakes, which makes them a little loose. Be sure to gently flip them over when cooking.
Enjoy these cakes with a side of fresh broccoli or your green veggie of choice
