Stuffed Pasta Shells

Ingredients:


  • 2 ounces of Lean Ground Beef 

  • 3 Jumbo pasta shells

  • ½ cup of Low sugar pasta sauce

  •  42g of Low moisture mozzarella cheese

  • ½ cup of Grated zucchini

  • 1 cup of Spinach

  • 1 cup of Green veggie of choice


Method:


  1. Brown ground beef in skillet over medium heat until cooked through

  2. Cook jumbo shells until al dente and drain.

  3. Once beef is done cooking, add in grated zucchini, spinach and pasta sauce.  Mix until evenly combined and spinach is cooked down.

  4. Preheat oven to 350 degrees

  5. Take beef mixture and spoon into jumbo shells

  6. Place stuffed shells into a baking dish and top with shredded cheese.

  7. Place in the oven and bake just long enough to melt the cheese.

  8. Serve with a side of green veggies of choice.
