 Santa Fe Stuffed Peppers

Ingredients:


  •  3 ounces of Ground Turkey

  • 1 TBS (14g) of Extra Virgin Olive Oil

  •  1/2 cups (200g) of cooked Quinoa

  •  100 g of Red or Orange bell peppers

  • 2 TBS of Salsa

  • ½ cup of Low moisture shredded mozzarella cheese


Method:


  1. Preheat the oven to 400 degrees F.

  2. Cut the bell peppers in half from top to bottom. Remove the seeds and lay them in the baking dish, cut side up. Place a thin layer of water in a baking dish.

  3. Brown ground turkey in skillet, season as desired

  4. Cook quinoa according to directions until tender

  5. Once quinoa is cooked, mix with ground turkey and salsa.

  6. Spoon the mixture into the bell peppers and top with cheese.

  7. Cover the baking dish with foil and bake for 15-20 mins, or until peppers are tender.
