Breakfast Burrito

Ingredients:


  • 3 ounces of Egg Whites

  • 100 g of Red and Green bell pepper mix

  • Salt and pepper - to taste

  • ½ cup of Shredded low moisture mozzarella cheese

  • 2 Whole wheat tortillas


Method:


  1. In a medium sized bowl mix eggs, egg whites, peppers, salt and pepper.

  2. Heat a medium sized skillet over medium-low heat.

  3. Pour in the egg mixture and scramble until eggs are cooked through.

  4. Place in center of center of tortilla and fold up like a burrito.
