Shrimp Fajita Bowl

Ingredients:
- 3 oz Shrimp
- 1/2 cup Pepper Mix (Red & Green)
- 1/4 cup Onion
- 1/2 cup Jasmine Rice- cooked
- 2 TBS Fajita mix
- 1 TBS Coconut Oil
Method:
- In a skillet over medium heat, sauté pepper mix and onions.
- When peppers and onions are almost tender, add shrimp and fajita seasoning.
- Finishing cooking until peppers are tender and shrimp is fully cooked.
- May need to add a small amount of water to help thicken the fajita seasoning.
- Turn heat to low to allow the seasoning to thicken slightly. Stir to evenly coat the peppers, onions, and shrimp.
- Place mixture on rice and enjoy!
