Pork Sheet Pan Fajitas

Ingredients:
- 4 oz Pork Tenderloin
- 1/2 cup Red and Orange Bell Peppers- sliced
- 1/2 cup White Onion- sliced
- 1 TBS EVOO
- 2 oz avocado
- Salt, pepper and other seasonings to taste
Method:
- Pre- Heat oven to 400 and line a cooking sheet with foil
- Slice bell peppers and onions to desired thickness and place in a bowl with 1 TBS of fajita seasoning and toss until there is a nice coating.
- Slice pork tenderloin into nice thin strips and season with remaining fajita seasoning.
- Place peppers, onions, and pork onto your lined cooking sheet, drizzle with EVOO and bake for 10 mins and then switch your oven to BROIL for 4 mins. Make sure to watch closely during these 4 mins so it doesn’t burn!
- Once finished cooking enjoy in a flour tortilla (not counted in macros), bowl or with some lettuce wraps for a fresh crunch!
