Turkey Meatball Pasta

Ingredients:
- 4 oz Ground Turkey
- 1/4 cup Spinach- chopped
- 1/8 cup Red onion- chopped
- Fresh garlic- to taste
- Salt and pepper- to taste
- 1/4 cup Whole Wheat pasta- cooked
- 1/4 cup Low sugar pasta sauce
- 1 TBS EVOO
Method:
*These directions are for making the whole pound of ground turkey! Just portion out finished meatballs to meat above macro count for protein! *
- Preheat the oven to 475ºF. Line 2 baking sheets with parchment paper, set aside.
- In a large bowl, combine the ground turkey, spinach, red onion, garlic, salt and pepper.
- Use your hands to mix all the ingredients together.
- *It’s easier to tell when the ingredients are combined when using hands. DO NOT OVERMIX, it will result in drier meatballs.
- Shape the meat mixture into ball, about 3 tablespoons of meat per ball. Place shaped meatballs on prepared baking sheet.
- Bake for 11-13 minutes or until the meatballs are completely cooked.
*A cookie scoop works great to make evenly sized balls! Which will make it easier to portion them out once cooked, as they will be about the same weight/size! *
