Pineapple Pork Bowl

Ingredients:
- 4 oz Pork Tenderloin- shredded
- 2 TBS Coconut Aminos
- 2 TBS Pineapple Juice
- Crushed Red Pepper Flakes- to taste
- 1/4 cup Can Pineapple Chunks- drained
- Salt and Pepper- to taste
- Garlic- minced- to taste
- 1/3 cup Jasmine Rice- cooked
- 1 TBS EVOO
Method:
- Drain the pineapple, reserving 1/2 cup of the juice
- In a bowl combine the coconut aminos, pineapple juice (from the can), garlic, and pepper flakes.
- Pour over the pork and let it marinate while you prepare the rice according to package directions
- Cook pork in crock pot on low for about 6hr or high for about 4hrs. Cook time will depend on size of tenderloin
- When rice is cooked, place in bowl and top with pork and sauce mixture. Can top with fresh jalapenos for a little heat to this dish!
