Ingredients:
- 100g egg white
- 2 Large Eggs
- 100g Red and Green bell pepper mix
- Salt and pepper - to taste
- 0.25 cups Shredded low moisture mozzarella cheese
- 1 Whole wheat tortilla
- 2 oz Avocado
Method:
1. In a medium sized bowl mix eggs, egg whites, peppers, salt and pepper.
2. Heat a medium sized skillet over medium-low heat.
3. Pour in the egg mixture and scramble until eggs are cooked through
4. Place in center of center of tortilla, add avocado and fold up like a burrito
