Ingredients:
- 1 bell pepper- any color
- ¼ cup black beans
- ½ cup Rotel
- 1/3 cup quinoa- cooked
- 2 TBS Taco seasoning
Method:
- Cut the pepper in half and remove all the seeds.
- Line a 13 x 9 baking dish with parchment paper. (You can also use a baking sheet.)
- Preheat oven to 350 degrees F.
- In a large bowl, combine quinoa, Rotel, beans, and taco seasoning
- Spoon the quinoa mixture into each bell pepper half
- Place on prepared baking dish, cavity side up, and bake until the peppers are tender and the filling is heated through, about 20-25 minutes.
