Ingredients:
- 1 cup chickpeas
- 2 oz Sweet Potatoes
- 1 cup Bell Peppers- mixed colors
- ¼ cup Onion
- 1 TBS EVOO
- Garlic Powder- to taste
- Salt & Pepper- to taste
Method:
- Cube sweet potatoes and dice peppers and onions
- In a skillet on medium heat, spay with cooking spray. Cook potatoes and veggies until tender.
- Add chickpeas to skillet and heat until heated through.
- Season with garlic powder, salt and pepper and any other desired seasonings of choice.
- Serve in a bowl and top with some Sriracha for a little spice!
