Pineapple Pork Bowl

Ingredients:
- 5 oz Pork Tenderloin
- 2 TBS Coconut Aminos
- 2 TBS Pineapple Juice
- Crushed Red Pepper Flakes- to taste
- Red Onion- sliced, to taste
- 0.25 cups of Pineapple Chunks
- Salt and Pepper- to taste
- Garlic- minced- to taste
- 75 g of Jasmine Rice- cooked
Method:
- In a small bowl, combine the coconut aminos, pineapple juice (from the can), garlic, and pepper flakes.
- Pour over the and let it marinate while you prepare the rice according to package directions
- Cook pork tenderloin in crock pot on low for 8 hrs, or low for 4 hr
- *Cook time will depend on amount of meat*
- When pork is cooked through, let cool, then use 2 forks to pull the meat apart.
- When rice is cooked, place in bowl and top with pork and some fresh pineapple. Can top with fresh jalapenos for a little heat!
