Shrimp Alfredo Risotto

Ingredients:

 


  • 4 oz Shrimp
  • 0.25 cups of cooked Jasmine Rice
  • 0.5 cups of Low Fat Alfredo sauce 
  • 5 oz Mushrooms 
  • 1 cup Spinach 
  • 100 grams Broccoli

Method:

 


  1. Prepare shrimp in a medium skillet with seasoning of choice until cooked through
  2. Cook rice according to directions.
  3. In a medium skillet combine cooked shrimp and rice with Alfredo sauce, mushrooms and spinach on medium heat.  Mix until sauce is evenly combined and spinach is slightly wilted.  Can season with salt and pepper is desired.
  4. Serve with a side of broccoli or other green veggie of choice.
