Shrimp Fajita Bowl

Ingredients:


  • 3 oz Shrimp
  • 1/2 cup Pepper Mix (Red & Green)
  • 1/4 cup Onion
  • 1/2 cup Jasmine Rice- cooked 
  • 2 TBS Fajita mix
  • 1 TBS Coconut Oil 

Method:


  1. In a skillet over medium heat, sauté pepper mix and onions.
  2. When peppers and onions are almost tender, add shrimp and fajita seasoning. 
  3. Finishing cooking until peppers are tender and shrimp is fully cooked.
    1. May need to add a small amount of water to help thicken the fajita seasoning.
  4. Turn heat to low to allow the seasoning to thicken slightly.  Stir to evenly coat the peppers, onions, and shrimp.
  5. Place mixture on rice and enjoy!
