Shrimp Pad Thai

Ingredients:
- 4 oz Shrimp
- 1/2 cup Rice Pad Thai noodles- cooked
- 1 cup Stir Fry veggie mix
- 1 TBS Coconut oil
- 2 TBS Soy/Coconut Amino
Method:
- Prepare rice noodles according to package directions
- In a pan on medium heat, cook shrimp until tender
- Cook stir fry veggie mix as desired
- Using frozen is a great option! If using frozen add to the pan when you start cooking the shrimp!
- Once rice noodles are tender, add to the pan with shrimp and veggies. Tune heat off
- Add coconut oil and amino of choice to the pan and toss until evenly coated. Place in a bowl or on a plate and enjoy.
