Shrimp Alfredo Risotto

Ingredients:


  • 4 oz Shrimp
  • 1/2 cup Jasmine Rice- cooked
  • ¼ cup Low Fat Alfredo sauce
  • 1/8 cup Mushrooms- diced
  • ½ cup Spinach
  • 1 Cup Broccoli

Method:


  1. Prepare shrimp in desired method with seasoning of choice.
  2. Cook rice according to directions.
  3. In a medium skillet combine cooked shrimp and rice with Alfredo sauce, mushrooms and spinach on medium heat.  Mix until sauce is evenly combined and spinach is slightly wilted.  Can season with salt and pepper is desired.
  4. Serve with a side of broccoli or other green veggie of choice.
