Ingredients:
- 4 oz Ground Turkey
- 28 g of cooked Quinoa
- 100 g Red or Orange bell peppers
- 2 TBS of Salsa
- 0.25 cup of Low moisture shredded mozzarella cheese
Method:
- Preheat the oven to 400 degrees F.
- Cut the bell peppers in half from top to bottom. Remove the seeds and lay them in the baking dish, cut side up. Place a thin layer of water in a baking dish.
- Brown ground turkey in skillet, season as desired
- Cook quinoa according to directions until tender
- Once quinoa is cooked mix with ground turkey and salsa.
- Spoon the mixture into the bell peppers and top with cheese.
- Cover baking dish with foil and bake for 15-20 mins, or until peppers are tender.
