Pork Sheet Pan Fajitas

Ingredients:

 


  • 4 oz Pork Tenderloin
  • 1/2 cup Red and Orange Bell Peppers- sliced
  • 1/2 cup White Onion- sliced
  • 1 TBS EVOO
  • 2 oz avocado
  • Salt, pepper and other seasonings to taste

Method:

 


  1. Pre- Heat oven to 400 and line a cooking sheet with foil
  2. Slice bell peppers and onions to desired thickness and place in a bowl with 1 TBS of fajita seasoning and toss until there is a nice coating.
  3. Slice pork tenderloin into nice thin strips and season with remaining fajita seasoning.
  4. Place peppers, onions, and pork onto your lined cooking sheet, drizzle with EVOO and bake for 10 mins and then switch your oven to BROIL for 4 mins.  Make sure to watch closely during these 4 mins so it doesn’t burn!
  5. Once finished cooking enjoy in a flour tortilla (not counted in macros), bowl or with some lettuce wraps for a fresh crunch!
