Turkey Meatball Pasta

Ingredients:


  • 4 oz Ground Turkey
  • 1/4 cup Spinach- chopped
  • 1/8 cup Red onion- chopped
  • Fresh garlic- to taste
  • Salt and pepper- to taste
  • 1/4 cup Whole Wheat pasta- cooked 
  • 1/4 cup Low sugar pasta sauce
  • 1 TBS EVOO 

Method:


*These directions are for making the whole pound of ground turkey!  Just portion out finished meatballs to meat above macro count for protein! *

  1. Preheat the oven to 475ºF. Line 2 baking sheets with parchment paper, set aside.
  2. In a large bowl, combine the ground turkey, spinach, red onion, garlic, salt and pepper.
  3. Use your hands to mix all the ingredients together.
    1. *It’s easier to tell when the ingredients are combined when using hands. DO NOT OVERMIX, it will result in drier meatballs.
  4. Shape the meat mixture into ball, about 3 tablespoons of meat per ball. Place shaped meatballs on prepared baking sheet.
  5. Bake for 11-13 minutes or until the meatballs are completely cooked.

*A cookie scoop works great to make evenly sized balls! Which will make it easier to portion them out once cooked, as they will be about the same weight/size! *
