Pineapple Pork Bowl

Ingredients:

 


  • 4 oz Pork Tenderloin- shredded 
  • 2 TBS Coconut Aminos 
  • 2 TBS Pineapple Juice
  • Crushed Red Pepper Flakes- to taste
  • 1/4 cup Can Pineapple Chunks- drained
  • Salt and Pepper- to taste
  • Garlic- minced- to taste 
  • 1/3 cup Jasmine Rice- cooked
  • 1 TBS EVOO

Method:

 


  1. Drain the pineapple, reserving 1/2 cup of the juice
  2. In a bowl combine the coconut aminos, pineapple juice (from the can), garlic, and pepper flakes. 
  3. Pour over the pork and let it marinate while you prepare the rice according to package directions
  4. Cook pork in crock pot on low for about 6hr or high for about 4hrs.  Cook time will depend on size of tenderloin  
  5. When rice is cooked, place in bowl and top with pork and sauce mixture.  Can top with fresh jalapenos for a little heat to this dish!
