Breakfast Burrito

Ingredients:

 


  • 100g egg white
  • 2 Large Eggs
  • 100g Red and Green bell pepper mix
  • Salt and pepper - to taste
  • 0.25 cups Shredded low moisture mozzarella cheese
  •  1 Whole wheat tortilla
  • 2 oz Avocado

Method:

 


1.   In a medium sized bowl mix eggs, egg whites, peppers, salt and pepper.

2.   Heat a medium sized skillet over medium-low heat.

3.   Pour in the egg mixture and scramble until eggs are cooked through

4.   Place in center of center of tortilla, add avocado and fold up like a burrito
