Sweet Potato Pancakes

Ingredients:


  • 4 oz Baked sweet potato
  • ​1 scoop Protein powder
  • 1 whole Egg
  • ½ tea Baking powder

Method:


  1. Cook the sweet potatoes
    1. i)    bake at 400F for 50 mins or you could microwave for 3-4 mins
  2. Peel the sweet potatoes and mash with a fork
  3. Combine all ingredients into a blender and blend until smooth
    1. i)    You can also mix by hand if you don’t have a blender, you will just end up with a chunkier consistency.
  4. Spray a skillet with non stick spray and heat over low medium heat
  5. Use a spoon and spoon out batter into the pan
  6. Cook for 3-4 mins on each side
