Feta Kale Egg Whites w/ Toast

Ingredients:


  • 1 slice ezekiel bread or wheat toast
  • 1 cup chopped kale, stems removed
  • 1/2 cup of egg whites
  • 1 tbsp of feta
  • Salt, and pepper for seasoning

Method:


  1. Toast bread in a toaster, or toaster oven and set aside.
  2. Heat a large skillet over medium with cooking spray. Add kale, stir to coat, then cook, until kale begins to soften (about 5 minutes)
  3. Add salt and pepper for seasoning, cook for an additional 1 minute.
  4. Remove from heat, stir in feta cheese then cover to keep warm.
  5. In a small skillet, pour 1/2 cup of egg whites and sprinkle with a little extra salt and pepper. Cook until whites are nearly set, about 2 minutes.
  6. Place half of the kale on top of the toast, then top with egg whites.
