Quinoa Stuffed Peppers

Ingredients:


  • 1 bell pepper- any color
  • ¼ cup black beans
  • ½ cup Rotel
  • 1/3 cup quinoa- cooked
  • 2 TBS Taco seasoning

Method:


  1. Cut the pepper in half and remove all the seeds.
  2.  Line a 13 x 9 baking dish with parchment paper. (You can also use a baking sheet.)
  3. Preheat oven to 350 degrees F.
  4. In a large bowl, combine quinoa, Rotel, beans, and taco seasoning
  5. Spoon the quinoa mixture into each bell pepper half
  6. Place on prepared baking dish, cavity side up, and bake until the peppers are tender and the filling is heated through, about 20-25 minutes.
