Chickpea & Sweet Potato Hash

Ingredients:


  • 1 cup chickpeas
  • 2 oz Sweet Potatoes
  • 1 cup Bell Peppers- mixed colors
  • ¼ cup Onion
  • 1 TBS EVOO
  • Garlic Powder- to taste
  • Salt & Pepper- to taste

Method:


  1. Cube sweet potatoes and dice peppers and onions
  2. In a skillet on medium heat, spay with cooking spray.  Cook potatoes and veggies until tender.
  3. Add chickpeas to skillet and heat until heated through.
  4. Season with garlic powder, salt and pepper and any other desired seasonings of choice.
  5. Serve in a bowl and top with some Sriracha for a little spice!
