Ingredients:


  • 4 oz Portabella Mushrooms
  • ½ cup Bell Peppers- mixed colors
  • ¼ cup White Onion
  • 2 TBS Salsa
  • 1 TBS EVOO
  • Taco Seasoning- to taste
  • 2 Soft Corn Tortillas

Method:


  1. Warm a large skillet over medium heat. Add EVOO, sliced portabella mushrooms, sliced bell peppers and onions to the skillet and cook for about 7-8 minutes, until slightly tender.
  2. Add the taco seasoning, mix well and cook 1-2 minutes or until mushrooms reach desired tenderness. Remove from heat.
  3. Serve immediately in warm tortilla with desired toppings such as salsa, shredded cheese, sour cream, and/or guacamole.
