Ingredients:


  • 1 lb ground turkey
  • 3/4 cup cooked quinoa
  • 1/2 cup rolled oats
  • 1 carrot, diced
  • 1 green onion, diced
  • 1 egg
  • 2 egg whites
  • Salt, cumin, pepper, ground mustard, chili powder, garlic powder for seasoning

Method:


  1. Preheat oven to 375 degrees and grease a muffin pan or line with muffin cups.
  2. Mix all ingredients in a large bowl together.
  3. Roll into balls (about 3 tablespoons of the mixture per ball) and place in muffin tin.
  4. Bake for 35-40 minutes until fully cooked.
  5. Let cool for 5 minutes, use a knife to loosen the edges (the egg whites will sort of ooze out a bit and make them stick slightly) and cool on a rack.
  6. Store in the refrigerator.
